First Post :)

Hi, I'm Katia and today I am starting my first blog. I am a student who just moved from Melbourne to the Gold Coast. I'm a big foodie and love cooking so I decided, as I have some spare time this year, to start blogging about my passion for food. I plan to post about different foods I eat and cook and share recipes and hints that I discover along my food journey.

    So i am in need of distraction so figured i'd give you one of my favourite recipes. Its a really odd mixture but everyone who has tried it loved it. It was in one of the cook books at work: My Greek Family(?)/Kitchen.

    Ingredients:
    * 250g pearl barley
    * 200g greek feta
    * 1/2 cup pomegranate seeds (sounds odd, but taste amazing in this)
    * 50g walnuts, toasted and chopped
    * 3 tablespoons finely chopped mint
    * 2 tablespoons finely chopped parsley
    * 3 tablespoons finely chopped spring onion

    Dressing:
    * 2 teaspoons ground cumin
    * 3 tablespoons olive oil (good quality)
    * 2 tablespoons red wine vinegar
    * 1 tablespoons honey
    * 1-2 cloves garlic
    * salt and pepper

    Directions:
    Bring 3 cups of salted water to the boil, then reduce to a simmer. Rinse the pearly barley and add to the pan. (NB: barley should be soaked in water for 2 hours prior and left in fridge) Cook for 20-25 minutes or until the barley has softened. drain, then place in a bowl and cool to room temp.

    Cut the feta into cubes and add to the barley with the remaining salad ingredients.

    Combine the dressings ingredients in a small bowl and pour over the barley salad (the honey will melt with warm barley). Toss gently. Sprinkle extra mint and parsley leaves as well as pomegranate seeds on the salad.



    With the pomegranate, to get the seeds, but one in half over the sink and over a strainer peel them out of the outer skin. Try to pick off as much of the white fluffy stuff as possible.

  2. oh wow sam that sounds amazing! is it a salad? I will make it next week hopefully when I can go get ingredients etc. I'll post it once I make it :)
